BEETROOT DIP

Using: ACTIVE CORALS

Beetroots are a good source of dietary fibre, vitamins and minerals including magnesium, potassium and folate. ACTIVE CORALS and beetroot are a great combination to provide lots of antioxidants and help fight inflammation. This ruby red beetroot dip with ACTIVE CORALS can double up as a sandwich spread or mash too.

Recipe Serves: 1 bowl of dip, approx. for 6 people


INGREDIENTS

  • BOTANISTRY ACTIVE CORALS, 3 teaspoons
  • Beetroot, 4 medium-sized
  • Garlic, 4 cloves
  • Greek yoghurt, 6 tablespoons
  • Lemon juice, 2 tablespoons
  • Pepper & salt to taste

METHOD

  1. Peel and clean the beetroot, then boil or steam them.
  2. Cut the beetroot into quarters and add into a food processor along with the garlic to blend well.
  3. Add the ACTIVE CORALS, Greek yoghurt, fresh lemon juice, salt & pepper, and blend further until the consistency is smooth. Further season to taste.
  4. Place into a dish and serve with pita chips or crackers.

TIPS & TRICKS

  • Substitute the Greek yoghurt with a dairy-free alternative for a vegan option.
  • For a more indulgent dip, add cream cheese instead of Greek Yoghurt. Additional salt may not be needed.
